How to use Pink
Curing salt
#1.
1 teaspoon, 0.2 oz, or 5.67 grams per 5# meat
1 2/3 Tablespoons, 1 oz, or 28.35 grams per 25# of meat.
For 20% brine pump
2 2/3 Tablespoons, 1.6 oz, or 45.36 grams per gallon water.
It is
HIGHLY recommended
you use a scale to weigh your cure as
volume measuring is not accurate
.

o not mix cure with other ingredients till ready to use.
Do not mix cure into HOT water, use cool water only.
USDA requires between 120 – 200 Parts Per Million of "in-going
curing agent
" for brine cured meat. Per USDA Processing Inspectors Handbook, Pg 12. Using the above amounts gives you approximately 160 PPM.

#1 is both a color agent and food preservation. It prevents/slows spoilage by bacteria or fungus.

curing agent
. They are used as part of the process to make;

ured meat such as Ham, Bacon, Pastrami, Corned beef,
and many others
. The reason for using
cure
is to inhibit the growth of bacteria, specifically Colostrum botulinum in an effort to prevent botulism.
C
ure
also contains red dye that makes it pink to prevent it from being confused with common table salt. Thus
cure
is sometimes referred to as "pink salt".

ures
are not to be confused with Himalayan pink salt, which is halite with trace elements that give it a pink color. Pink
cure
#1 is 1 of the most common curing
agents
. It is also called Insta-Cure #1, Prague Powder #1, Sure Cure, all pink
cure
#1 is the same. It contains 6.25%
curing agent
and 93.75% salt.
The curing agent
provides the characteristic flavor and color associated with curing, NOT the red dye.
