    This versatile, full height unit is great for keeping hot foods at the perfect temperature to serve at a moment's notice! With a proofing mode and adjustable humidity settings, you can also proof dough before it's ready to bake. It has an output of 1440W and requires a 120V electrical connection. In heat mode, this model operates between 80 and 185 degrees Fahrenheit; in proof mode, it operates between 85 and 115 degrees Fahrenheit at 30-100% humidity.
    Easy-To-Use Controls
    With humidity levels adjustable from 30% to 100% and 9 different temperature settings, you'll be able to accomplish the right results every time! A simple toggle switch lets you select between the "heat" and "proof" modes, while the vibrant LED temperature display makes it easy to keep an eye on things from across the room.

    The rugged aluminum interior contains fixed pan slides set on 1 1/2" increments. You can easily place up to 36 full size sheet pans on whichever level is convenient.

    What's the difference between an insulated and non-insulated holding cabinet?

    Insulated and non-insulated holding cabinets both offer the same function by holding food at safe temperatures for hours until ready to serve, but for best results, it's important to make a purchase based on your desired application. Non-Insulated Holding Cabinets are intended for applications where the doors will be closed for the majority of the day, such as proofing bread or keeping backup portions hot. Insulated Holding Cabinets are better suited for keeping food hot when the doors will be opened and closed much more frequently since they are better equipped at retaining the heat.

    How does ambient room temperature influence the performance of this cabinet?
    A.
    Ambient room temperature can affect the temperature of your food product at holding/proofing. Due to differences in ambient room temperature, you may need to monitor the proofing process and/or adjust the proofing temperature and humidity settings of your Avantco heated holding/proofing cabinet to achieve the desired results. You may also need to adjust the temperature of the water used to produce steam.
    In proofing mode, once steam is generated from the water contained in the bottom water pan, adjustments can be made to release heat in order to reach the desired temperature. If you are trying to proof at low temperatures, the desired proofing temperature must be warmer than the ambient temperature in your kitchen.

    The proofing function of this cabinet works best when it’s filled to near maximum capacity. A greater amount of dough will absorb excess humidity, keeping the cabinet temperature at the lower range.
